This recipe is amazing!! No cooking required, and appropriate for most raw foodists. 

Cobbler Filling:
4 medium apples
1/2 cup soft dates
1/2 tsp. ground cinnamon
2 T honey or agave nectar

Apple Crumble Print E-mail

3 cups ground raw walnuts
3 tb maple syrup or raw honey or date paste*
3 tsp cinnamon
3/8 tsp salt
2 apples cored and chopped
1/2 lemon or 2 tb lemon juice

Toss apples with freshly squeezed lemon juice.  Layer glass pie dish with apples.  Mix walnuts, sweetner, cinnamon, and salt.  Spread a layer of mixture over the top of apples like a crust.  Eat as is or warm in an oven!

*Date paste - 1/2 cup of dates seeded and blended with water until a creamy consistency is reached.

Curry Rice Print E-mail

1 cup of brown jasmine rice
1 1/2 cups water
1-3 tsp curry of your choice
1 cup chopped bok choy
1/2 cup chopped carrots
1/4-1/2 chopped yellow or white onions
1 can coconut milk

Prepare rice with 1 1/2 cups water instead of the usual 2 cups.  Mix coconut milk and curry while rice is cooking.  Just before rice is finished cooking add coconut-curry mix and let simmer for about 5 minutes or until rice has soaked up sauce. Quickly saute veggies and add to rice mixture.  Serve and enjoy!

This recipe was adapted from Nourishing Traditions, a cookbook by Sally Fallon. She says of this soup, "(It is) recommended for increased energy and treatment of stress. In particular, zucchini with it high sodium content nourishes the adrenal glands. Thomas Connelly, a chiropractor from Washington, D.C., recommends this soup for back pain, ligament problems and other symptoms of depleted adrenal function."

Hydrating Aloe Delight Print E-mail

Juice 1 cucumber in a juicer**
Juice 1-2 apples in a juicer
Juice of 1 freshly squeezed lemon
2-3 pinches Himalayan salt
Prepared aloe gel*

Blend all ingredients in a blender.  Add water and ice if desired.

*To prepare (fillet) aloe vera, cut off a chunk of aloe vera, cut the sharp edges of the sides,, then fillet the skin off the top and bottom.  The clear slimy part is what to use for your smoothies.
**If you don't have a juicer you can alternatively blend the peeled cucumbers and apples, and strain them if desired.
 
Live Hot and Sour Soup Print E-mail

1/2 cup mung bean sprouts
3 tbs. nama shoyu, soy sauce, or Bragg's Liquid Aminos
5 dried apricots
1 1/2 cups chopped tomatoes
1/4 cup thinly sliced green onion
2 Tbs. organic raw apple cider vinegar
1 tbs. peeled and minced fresh ginger
1/2 cup diced cucumber or zucchini
1 jalapeño chile, seeded and minced
2 tbs lime juice
2 tbs chopped cilantro
1 tbs sweetner of choice (raw honey, raw agave nectar...)
1/4 tsp cayenne pepper, or to taste

1. Stir together sprouts and soy sauce, and let marinate while preparing soup.
2. Soak apricots in bowl of hot water 5 minutes to soften.  Drain.
3.  Place apricots, tomatoes, green onion, vinegar, ginger, and 3 cups water in blender or food processor; blend until smooth.  Transfer to serving bow, and stir in cucumber, jalapeño, lime juice, cilantro, sweetner, cayenne pepper, and sprout mixture.

Mexican-Flair Garden Wrap Print E-mail

I absolutely love Mexican food and everything about it.  To me, it's comfort food.  Unfortunately, lately, I am overwhelmed by the cheese, and consequently end up not being so comforted by the end of the meal.  Today, in the midst of craving a burrito, but also craving some fresh veggies, I created a garden version to satisfy my mexican taste buds.  And what's even better is that since it is mostly veggies, I ate two and didn't feel the least bit sick about it!
